Yeah I know..... we haven't got to halloween yet.... but my cake's in the oven baking right now!  We were talking in chat last night - and here's the link to the recipe I use.... from Delia Smith's Christmas Book...


I must say I use this as a base.  This year I've slung in some rum as well as the brandy, added cinnamon and ground ginger to the spices, used twice the amount of glace cherries and mixed peel, plus 100g of crystallised ginger, and chopped walnuts instead of almonds.

When it's cooled I shall store it  wrapped in greaseproof paper, then every couple of weeks I'll haul it out, stab it all over with a knitting needle, and sprinkle it with a small glass of whatever I have in my cupboard.  This year it will probably be sherry, port, marsala tia maria and grand marnier.  All stuff I've had for ages and don't drink much of during the normal course of things.....  Then on Christmas Eve I shall cover the top with a mixture of nuts.... brazils, walnuts, pecans and maybe some glace fruits.

It ends up very boozy, moist and crumbly.  Which is just as well cos it's usually halfway through Jan before we tackle it, and with tiny slices it will probably last until easter lol!!
Doesn't matter if your glass is half full, or half empty - there's still plenty of room for more wine! ;o)

Dear me, there is very little in that I actually like err walnuts and the usual cake ingredients eggs, flour, butter, sugar haha so I reckon if I leave everything out I don't like and use the knitting needles for the original purpose by christmas I will have a lovely walnut cake and a new sweater!

Bless and thanks very much Noufie, now I have to try and track down black treacle.
I Googled and molasses can be used but it doesnt give the same flavour and darkness to the mixture it seems. 
There is a store in Newmarket that sells Brit goods so I'll be popping in there this week with my fingers crossed smiley10
